1-2  tube(s) of Mexican chorizo

one can diced tomatoes with green chilies

1/2 c salsa

2 cups monterey/cheddar cheese, shredded

2 tbsp cumin

2 tbsp paprika

1 medium onion, diced

4 eggs

2 cups bread crumbs

green onion diced

2 cans of cheddar cheese soup

 

In large bowl, blend with hands, meat, cumin, tomatoes, salsa, shredded cheese, paprika, 1st onion, eggs, bread crumbs.

blend well till all evenly mixed, place into a 11 x 15 casserole dish that's been sprayed with oil.  spread evenly and with fingers, put holes in all around, to allow heat to penetrate the thick areas of meat.

Bake 350 degrees for 50 minutes, remove, try and drain most of the oil/grease off, spread soup on top and return to oven for 10 minutes to warm soup.  Remove and sprinkle diced green onion on top and serve.

 

will feed 10-14 people, recipe can be divided for smaller crowds, serve with chips and salsa, Spanish rice, or with frozen veggies for a healthier side dish.
